Wild Rice Salad with Greens


  • 2 Cups uncooked organic wild rice
  • 1 bunch kale, chopped
  • ½ bunch chard, chopped
  • 1 bunch green onions, chopped
  • ½ cup parsley or basil, chopped
  • ½ cup fresh lemon juice
  • ½ cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp sea salt
  • 1 tsp black pepper 


  • In a medium pot over high heat bring 4 ½ cups of water to a boil.  Add the wild rice. Bring to a boil, reduce heat to low, cover and simmer for about 60-70 minutes (or until all water is absorbed)
  • When rice is almost done, in a small bowl, whisk together olive oil, lemon juice, garlic, sea salt, and pepper.  Pour dressing over greens in a large (heat resistant) serving bowl. Mix well.
  • Add cooked wild rice to serving bowl and mix well. Add a bit more salt (to taste) if necessary
  • Serve and enjoy

Makes about 8-10 servings
