Chickpea and Basil Pasta



* 2 boxes qunioa or brown rice pasta (I used pasta shells)
* 1 can of chickpeas, drained and rinsed
* Juice of 1 lemon
* about 1/2 cup of good quality olive oil
* 1 bunch basil
* 3 cloves of garlic, minced
* sea salt
* red pepper flakes 

1. Boil water and cook pasta according to directions 
2. While pasta is cooking, in a medium saucepan, add 1/4 cup of the olive oil, the drained chickpeas, the minced garlic, and sprinkle with a pinch of sea salt over medium heat, gently frying the chickpeas to add flavor - but careful not to burn the garlic
3. When the pasta is cooked and drained, add back to pot along with remaining olive oil, chopped basil, and juice of 1 lemon.  Add the sauteed chickpeas, sprinkle with more sea salt and red pepper flakes to taste. Enjoy!
