Easy (and Healthy) Blueberry Pie

Ingredients:

For the crust:
- 2 cups oat flour
- 2 TBSP Ghee or melted butter (or coconut oil for vegans)
- 1 egg (or flax egg for vegans) 
- 1/4 tsp sea salt

For the Filling:
- 5 cups blueberries (I used 2 bags of frozen wild blueberries and just thawed them) 
- 1/3 cup maple syrup
- 1/3 cup water
- juice from 1/2 a lemon
- 1 tsp cinnamon
- 1/2 tsp cardamom
- teeny pinch of nutmeg
- 2 TBSP chia seeds
- 2 TBSP flax seeds
- 1/4 tsp sea salt
- 1/4 tsp cornmeal or cornstarch

Directions:
- preheat oven to 350 degrees
- in a food processor mix flour + salt, add in ghee or butter and pulse until you begin to form a dough
- line a glass pie dish with oil or butter and gently press dough into dish and bake for about 8-10 minutes
- In a large saucepan, combine the blueberries, maple syrup, water, lemon, spices and salt and simmer for 3-5 minutes. 
- once the mixture is done simmering, add the chia + flax, and cornmeal and mix well. Let the mixture stand for about 5 mins.
- pour blueberry mixture into pie dish and bake for another 15-20 mins. 

Serve immediately or keep covered in fridge for up to 1 week.
